A supplier appointment, a farming question, a wildlife trade decision: the professional caviar circuit serves sharply different purposes. Even a free sample in personal luggage can need wildlife trade paperwork and food clearance. Great Britain's 125 g personal use exemption does not cover exhibition samples.
The right event depends on the work in hand. International seafood fairs bring together specialist suppliers; general food fairs open wider distribution networks. Aquaculture conferences examine farming methods, while sturgeon science symposia share research. CITES meetings have a different purpose: governments consider wildlife trade rules and implementation, admitting qualified observers under conditions. This guide maps the professional caviar industry, rather than consumer festivals or recreational tastings.
Choosing the right caviar event
Start with your purpose, then open the exhibitor directory or scientific programme. For sourcing, secure appointments with producers, processors and importers. For farm development, look for technical sessions that address your needs, not simply the largest exhibition.
The events below are verified starting points, not a ranking. Timing shows the usual planning window or a confirmed edition; check future dates with the organiser.
| Event | Organiser | Place | Usual timing | Date checked |
|---|---|---|---|---|
| Seafood Expo Global | Diversified | Barcelona, Spain | April 2027 | November 2026 |
| Seafood Expo North America | Diversified | Boston, United States | March | November 2026 |
| Seafood Expo Asia | Diversified | Singapore | September | November 2026 |
| SIAL Paris | Comexposium | Paris Nord Villepinte, France | October | November 2026 |
| Aquaculture Europe | European Aquaculture Society | Rotating cities; Athens in 2027 | Autumn; October in 2027 | November 2026 |
Caviar has a documented presence at Diversified's seafood fairs. The Global directory includes Adamas Caviar; the North America exhibitor gallery includes Azerbaijan Fish Farm, trading as Baku Caviar. Organiser material for Asia also lists caviar among exhibited products. A previous edition's listing does not confirm a company's attendance at the next one. Use those records to identify contacts, then confirm attendance for the edition you plan to visit.
SIAL Paris is a biennial food fair, next due 22 to 26 October 2028. Its 2026 directory lists Baku Caviar's sturgeon caviar: a concrete reason to examine the exhibitor list, beyond the sheer size of the show.
Farming questions and sturgeon science
For a sturgeon farmer, the useful programme is the one that addresses a production question. Aquaculture Europe combines a scientific conference, trade exhibition, industry forums and workshops. The European Aquaculture Society confirms Athens for 18 to 21 October 2027, with subjects including freshwater broodstock management, recirculating aquaculture systems, health, welfare and post-harvest processing.
Before dispatch, decide whether the caviar will be tasted, displayed only, returned or destroyed.
Those subjects warrant a closer look. To find sturgeon-specific work, read the accepted abstracts and speaker affiliations: the broader topics alone do not establish a dedicated sturgeon session.
The specialist research series is officially the International Symposium on Sturgeon, singular. The World Sturgeon Conservation Society's ISS10 brochure describes a four-year cycle and identifies the tenth edition in Yichang, China, on 20 to 25 October 2025. WSCS co-organises the series.
That tenth edition is a past event. The organiser material gives no date or venue for the next one, so do not turn the four-year cycle into a travel booking. Follow WSCS announcements and the Caviar Events Calendar for a confirmed listing.

CITES policy meetings
CITES meetings shape the rules around wildlife trade. The CITES Conference of the Parties considers changes to the Convention's species appendices and adopts resolutions and decisions. The Animals Committee provides scientific advice, making it relevant to biological evidence and implementation questions, not a place to negotiate supply contracts.
Observer access is conditional, not public admission. For the Conference of the Parties, the Convention provides for technically qualified organisations, with admission subject to its objection procedure. Animals Committee meetings have their own observer admission rules. Before arranging travel, check the meeting notice, your organisation's eligibility, nomination requirements and registration deadline.

Taking caviar samples across borders
Settle the paperwork before packing the samples. Exhibition caviar carried across borders, including to events in Singapore, needs planning even when it travels in luggage or is supplied without charge. Wildlife trade controls and food controls are separate; a sample is not automatically exempt.
First establish whether the journey counts as an import into the destination jurisdiction. Movements between EU member states are not imports into the EU.
- EU: Ask the destination's CITES management authority to confirm wildlife documents for the species and route. For Barcelona, Spain's January 2026 samples guidance explicitly covers trade fairs and samples in personal luggage. Agree the food entry procedure with the Spanish authorities before shipment.
- Great Britain: APHA's CITES guidance requires permits for relevant border movements. The 125 g per person exemption covers individually marked caviar carried for personal use, not exhibition samples. Separate guidance for trade samples and display items expressly covers material not intended for human consumption; it cannot authorise tasting samples.
- Northern Ireland: Seek separate advice from APHA on CITES and DAERA on food entry requirements. The Great Britain sample guidance cited here does not establish Northern Ireland's procedure.
- United States: Arrange USFWS documentation, declaration and wildlife clearance, including the commercial importer's licence where required. FDA prior notice is a separate requirement for imported food samples. Its enforcement discretion for certain analytical samples expressly excludes trade show tastings.
Before dispatch, decide whether the caviar will be tasted, displayed only, returned or destroyed. Obtain written instructions for that route. Use importing, exporting and re-exporting caviar for the wider documentation workflow, and agree refrigerated delivery, storage and service arrangements with the organiser.
Make every meeting count
Arrive with a short supplier questionnaire: species identity, roe origin, processing location, traceability records and intended destination market. Attach tasting notes to the documented sample lot. Keep the supplier's claims distinct from evidence checked independently.
At research meetings, build your session choices around a specific question. Ask what was measured, under which farming conditions, and whether the results are published. For compliance updates, retain the authority's document and revision date, rather than relying on a presentation slide.
Reconfirm dates, venues and programmes with the organiser before booking.
