Turn a spoonful of Kalix Löjrom upside down and the roe should stay put. Set it on a flat surface and it should hold its shape. Both are requirements in the protected product’s official specification: a compact spoonful of tiny orange eggs, rather than loose beads swimming in liquid.
These are the eggs of vendace, Coregonus albula, a northern European fish. Kalix Löjrom is the protected Swedish product made from that species within a defined part of the Bothnian Bay coast. Its protected designation of origin, or PDO, binds the name to the fishing area and preparation method, not simply to the fish or its colour.
Vendace roe beyond Kalix
Vendace belongs to the salmon family, Salmonidae, not the sturgeons. In Swedish, the fish is siklöja and its roe is löjrom. In Finland, the fish is muikku and the roe muikunmäti: a name for the fish eggs, without a claim to the Swedish protected origin.
Its range reaches well beyond Kalix. A 2024 scientific review describes vendace in northern European lakes, including those of Finland, Sweden, Russia, Estonia, Germany, Poland, Norway and Denmark. It also records populations in the low-salinity Gulf of Bothnia and Gulf of Finland. The Bothnian Bay is one important habitat within that wider range.
For comparisons across fish families, start with other fish roe. The guide to whitefish and other freshwater roe distinguishes vendace from products carrying broader whitefish descriptions.
What makes Kalix Löjrom a PDO
Kalix Löjrom belongs to a defined stretch of coast, not to a single company. Its PDO was registered by Commission Regulation (EU) No 1025/2010, adopted on 12 November 2010 and published on 13 November 2010. Defra’s register records 13 November 2010 as the original EU registration date. The regulation entered into force 20 days after publication, on 3 December 2010.
The designated land area comprises Piteå, Luleå, Kalix and Haparanda municipalities. At sea, the boundary runs from the Åby river estuary in the south to the Torneå river estuary in the north, extending no more than 40 km from the coast. A Kalix address alone does not qualify a jar.
Swedish control guidance requires producers to notify the responsible authority and demonstrate compliance before using the protected name and symbol. Other vendace roe remains vendace roe, however carefully it is prepared or familiar the dishes in which it appears.

What the PDO specification requires
The details matter, especially when reading older accounts of how Kalix Löjrom is made. The EU published an amended single document on 4 May 2021, so numerical details from the original 2010 application, particularly its older salt and water-content figures, should not be mistaken for the amended requirements. The table keeps the source of each requirement clear.
| Requirement | What the specification says | Source | Date checked |
|---|---|---|---|
| Fish | Vendace roe, Coregonus albula, from the defined sea area. | Original single document, 2010 | November 2026 |
| Area | The four named municipalities and defined coastal fishing waters. | Amended single document, 2021 | November 2026 |
| Season | A five-week fishing period in the product description. | Amended single document, 2021 | November 2026 |
| Timing | Roe extracted on the day the fish is caught. | Original single document, 2010 | November 2026 |
| Local preparation | Rinsing, whisking, sieving, drying, salting and thorough cleaning within the geographical area. | Amended single document, 2021 | November 2026 |
| Salt | The only additive: 4.0% salt, sodium chloride. | Amended single document, 2021 | November 2026 |
| Consistency | Stays in an inverted spoon; holds its shape on a flat surface. | Amended single document, 2021 | November 2026 |
The source column distinguishes requirements in the original published document from those in the amended description. The two documents are not identical.
Bead size, colour and flavour
The specified bead diameter increases across the Kalix fishing season. The official Kalix Löjrom description gives an approximate diameter of 0.8 mm early in the five-week fishing period, increasing to about 1.3 mm by its end. Those measurements describe the protected product, rather than every vendace population.
Orange is the colour specified for Kalix roe, in contrast to the yellow of freshwater vendace roe. Across these products, yellow to orange is therefore a more useful description than a single golden shade. Colour alone cannot authenticate the protected origin.
The official flavour description emphasises mildness, fish oil and salt. Together with the requirement for a cohesive spoonful, it gives a clear picture of the intended product. These are specification descriptors, rather than tasting notes for an individual producer’s batch; salting and handling still shape comparisons between actual products.
Autumn fishing and freezing
Autumn is the harvest season, but frozen roe carries it beyond autumn. The Swedish Board of Agriculture’s Smaka Sverige account describes roe being removed by hand, rinsed, rack dried, salted and packed before freezing. It also gives a preparation limit of 24 hours from landing.
The fishing calendar has two distinct measures. Sweden’s marine authority gives the general Bothnian Bay trawling window as 20 September to 31 October, unless it closes the fishery earlier. The PDO product description uses a five-week period. For any particular year, follow the applicable fishing rules rather than treating that seasonal shorthand as the legal window.
The original EU application described Kalix Löjrom as mainly sold frozen or defrosted, with smaller quantities sold fresh during the catch. Freezing is part of its documented commercial practice. At home, follow the pack’s storage, defrosting and use instructions: the PDO defines the product, not how to store it.

Finland and Russia
Finnish muikunmäti has its own identity. Finnish producer Disas lists Finnish vendace roe, including frozen roe, in its range. This is a separate Finnish product tradition, not another name for Kalix Löjrom or an entitlement to use Sweden’s protected designation.
Russia also has vendace. HELCOM’s species account documents fisheries in Sweden, Finland and Russia and notes the importance of the roe. That establishes the Russian connection to vendace roe; identifying an individual jar still calls for a named species and documented source, rather than a Russian-language description or Nordic-looking presentation.
Orange is the colour specified for Kalix roe, in contrast to the yellow of freshwater vendace roe.
For the wider regional picture, read Nordic caviar in Finland and Sweden. Keep three things distinct: the species, the country where the fish was caught and the geographical boundary of a protected designation.
Management and stock status
Sweden can stop trawling in the Bothnian Bay before its normal seasonal end. A published closure took effect on 20 October 2025. That is a specific example of management in action, not a recurring closing date. According to the Swedish Agency for Marine and Water Management, Bothnian Bay vendace is nationally managed in Sweden.
Assessing the stock takes more than counting the catch. SLU’s 2024 stock report describes an updated Bothnian Bay assessment using fishery-independent acoustic surveys, catch and effort information, biological data and modelling. The 2024 Baltic review also warns that fishing restrictions affect Swedish catches, so catches need not track abundance directly.
No current nationwide stock verdict for Finland, single rule covering all its vendace waters, or November 2026 Bothnian Bay stock classification was found. The protected name establishes origin and production requirements. Neither it nor a description of traditional fishing supplies a current sustainability assessment.
The protected name in the EU and UK
Kalix Löjrom on a label or menu must mean the protected product. In the EU, roe caught outside the designated area, including roe from Swedish lakes, cannot take the name simply because it comes from vendace. It must meet the origin and production requirements. Swedish control guidance also covers restaurant menus and repacking, tying the name to the product actually used.
For an EU-produced PDO food sold in the EU or Northern Ireland, the relevant EU scheme logo is mandatory. The amended single document adds no separate product-specific labelling rule. Look for the registered name and PDO identification together. An orange bead photograph or the word Swedish is no substitute.
Protection continued after the UK left the EU. Defra lists Kalix Löjrom as registered under the UK scheme from 23:00 on 31 December 2020. That scheme applies in Great Britain, meaning England, Scotland and Wales; the EU scheme applies in Northern Ireland. The legal system protecting the name changes across that boundary. The place where Kalix roe originates does not.
How vendace roe is eaten
Löjrom on Swedish flatbread or an open sandwich, with chopped red onion and gräddfil: this is the local serving described by Visit Kalix. Spoon on the roe, add the cultured sour cream and keep the onion distinct. Each mouthful can carry as much onion or dairy as the eater wants.
For toast, accompaniments and complete preparations, see löjrom on toast and Swedish roe dishes. Continue with Nordic roe culture for the traditions surrounding the meal. The protected designation tells one precise story of origin; northern Europe’s ways of eating roe reach much further.
